Spaghetti Vongole with fried zucchini strips.

I have had Spaghetti Vongole many times, but quite recently, I ate this amazing version of it in a little town near Genoa called Tarzana. This one had lightly fried zucchini strips and I’ve tried to recreate it here.

My little kids love to help me prepare this dish. It’s so easy, yet you will end up with fantastic, tasty Spaghetti with little effort.

Ingredients

Fresh Clams, about 8 per person.
4 Garlic cloves sliced very thin.
1 fresh green chillie.
1 zucchini sliced into thin strips.
4 rashers of streaky bacon cut into very small pieces.
Bunch of fresh flat leaf parsley, chopped very fine.
1 and a half glass of white wine. .
Olive oil.
Spaghetti.
Salt.

Method

Add your pasta to the boiling salted water.

Heat some olive oil in a big frying pan, put in the bacon and fry until crispy. Chuck in the zucchini strips and fry until golden then add the garlic and chillier and fry for about 2 minutes. Chuck in the wine and turn up the heat a little. Put in the clams and cover with a lid. Turn the heat to a high simmer and cook the clams for around 7 minutes.

Take off the lid to check. When the clams are all open, they are done. Don’t eat any that refuse to open.

Make sure your pasta has a good ‘ Al Dente’ bite, and drain. Now, add your drained spaghetti to the pan with the clams. Put in the parsley, add a little salt and toss well, making sure the lovely clam sauce is well mixed with the spaghetti.

There you have it, Spaghetti Vongole. Easy!!!
